If you're a meat lover and have never tried Wagyu before, we heavily recommend you try this. It is an absolutely incredible, juicy, and super tasty piece of meat. Japanese thoroughbred wagyu striploin from Itoham. It is a pure breed "Japanese black" from Kagoshima Prefecture. We first grill the cutout on our conro both sides. Then the meat rests for about 5 minutes before it is cut into beams and now grilled on the cut sides to medium-rare. Hereby the meat retains its juice and power.

The cattle are grain-fed for more than 500 days, which ensures a thoroughly tasty piece of meat. In order to preserve as much juice, power, and taste as possible in the meat we don’t remove the little tendon that sometimes is present, and let it be up to you whether you cut it away or eat it. We hope you agree with our decision. Either way, bon appetite. Served with finely chopped daikon and carrot turned in ponzu dressing and toasted black sesame.
